Tempering machine Impex TMA-80 is designed for chocolate-coating machines to provide a continuous process of glazing confectionery products, namely for melting, mixing and subsequent tempering of chocolate or chocolate glaze.

The tempering vessel consists of a vertical chamber with a water bath and a kneading organ that performs continuous mixing. The chocolate mass is placed in the internal capacity of the machine. The water in the water bath is constantly mixed with a circulation pump to precisely equalize the temperature throughout the entire volume of the bath.

 

Principle of operation of tempering tank.

When working in automatic mode, the chocolate mass passes through four temperature stages:

  1. The mass is heated above the melting point of all the crystals (up to 45-50 ° C) and is maintained for a certain time with constant stirring.
  2. Rapid cooling to 26 … 27 ° C is performed. This allows the crystallization of “good” beta crystals to begin.
  3. Heating, up to 28 … 29 ° C with a little “breather”, so that the beta crystals continue to form.
  4. Final heating to 31..32 ° C. This final temperature increase will melt the unwanted crystals if they were formed. This ensures the transition of cocoa butter from unstable to stable form, and prevents fatty “graying” of chocolate masses.

 

The whole process of tempering is continuous with intensive mixing.

The unit can be additionally equipped with a mobile trolley, for easy maintenance.
