The unit is designed to create the required microclimate in dough proofing chambers at public catering enterprises, bakeries, and bakery workshops.
The equipment makes it possible to set and maintain the working temperature and humidity in the chamber with high accuracy, ensuring a high-quality dough proofing process before baking.
Unit design
- The unit consists of a climate control unit, a stand, and a remote electrical cabinet.
- The climate control unit housing is made of polished stainless steel.
- The climate control unit is installed on a stand inside the proofing chamber.
- The equipment is connected to the water supply system and the control cabinet.
- The electrical cabinet is mounted on the wall outside the proofing chamber.
Operating features
The climate control unit operates in automatic mode. Air from the chamber passes through the climate control unit, is heated by heating elements, humidified by the steam generator, and returned back into the chamber.
Water is supplied automatically using a direct-acting solenoid valve. The system has water level control, protection against switching on the heating elements without water, and overheating control of the evaporation tank.
